    The flea market is a form of mobile commerce, with circulation within the urban areas of concern common, because of their sanitary deficiencies. Due to its character walking, their facilities are substandard, especially from the standpoint of sanitation of environmental pollution. This brings with it serious problems concerning food handling and garbage accumulated by commercial activity. The sanitary conditions of the environment and the food handler, the storage temperature, hygiene and maintenance of tools and equipment are critical and risk to fish quality, although these prerequisites are not met in many sales points at the fairs. The aim of this study was to evaluate the risk associated with environmental sanitary condition of the fish during its marketing, packaging and disposal of contamination in relation to the waterfront around the city of Manaus. The survey was conducted in the port area of Manaus, in a region with a total of 150 m in length. His character was based on descriptive and qualitative and quantitative analysis, the method used for environmental risk assessment was the Failure Analysis, Modes and Effects (Failure, Mode and Effect Analysis - FMEA). It was found that the peacock is the product of higher output (55.9%), followed by tambaqui (50%), the pacu (28.9%) and jaraqui (20.9%), the income generated by this dominating the trade is varied between R 500.00 t o R 500.00toR 2,000.00. The risk associated with the sanitary conditions of the fish varies from moderate to high, due to: the presence of vectors harmful to public health by the conditions of local infrastructure, by improper handling of fish and by insufficient hygiene of food; waste arising from the handling of fish for sale, water consumption without quality control, and the generation of wastewater from washing of fish. Control measures that can be applied involve the public and local traders, since improvements to sanitation investments in the areas of training and monitoring. It is hoped that there is effectiveness of medium and long term, and thus the scope of standards of environmental quality and social and local food security.
